Breakfast Muffins

Breakfast Muffins

Great for those in a hurry or a mid morning snack

Ingredients

100g plain flour
½ teaspoon baking powder
¼teaspoon cinnamon
2 tablespoons granulated sugar
3 tablespoons grated carrot
2 tablespoons grated apple
2 tablespoons raisins
2 fl oz vegetable oil
1 egg
1 teaspoon vanilla essence

Equipment

Mixing bowl
Spoon
Jug
Whisk
Muffin cases
Muffin tray

  1. Mix the flour, baking powder, cinnamon and sugar together.
  2. Stir in carrot, apple and raisins - put aside.
  3. In your jug, whisk together the oil, egg and essence.
  4. Stir together your wet ingredients to your dry ingredients.
  5. Spoon into 3 muffin cases. Don't overfill.
  6. Bake at 180°c for 30 minutes until firm to touch and a knife comes out clean when inserted.
